Blast freezing time depends on product size and density. Thin items like fish fillets freeze in 1 to 2 hours. Larger cuts of meat take 3 to 4 hours. Whole tuna or large frozen blocks can take 6 to 8 hours. A standard freezer takes 12 to 24 hours for the same load.
